NASI DAGING

NASI DAGING DENGAN AIR ASAM

Bahan-bahan:

5 cawan beras bathmati -bersih dan toskan1 kg. daging - dipotong kiub dan direbus
2 liter santan
7 1/2 cawan air rebusan daging(anggaran 1 cawan beras: 1½ cawan air)@ ikut suka
3 sudu besar minyak sapi
3 susu besar rempah kurma dibancuh dgn sedikit air
3 helai daun pandan -disimpulkangaram & serbuk perasa secukup rasa
2 bungkus rempah kurma
2 batang serai - dititik
10 helai daun limau purutdaun sup
2 biji cili merah (dibelah dua)

Bahan kisar:

15 ulas bawang merah
3 ulas bawang putih
3 inci halia
2 inci lengkuas
10 biji lada hitam
1 sudu besar jintan manis
1 sudu besar jintan putih

Bahan tumis:

1 batang kulit kayu manis
2 kuntum bunga lawang
5 kuntum bunga cengkih
2 kuntum bunga pelaga

Cara memasak:
1. Panaskan minyak sapi dalam kuali.
2. Tumiskan bahan tumisan iaitu kulit kayu manis,bunga lawang,bunga cengkih dan buah pelaga.
3.Campurkan bahan yang telah dikisar dengan rempah kurma.Tumiskan dan biarkan sehingga pecah minyak dan wangi.
4.Masukkan air rebusan daging, santan cair,cili merah,serai ,garam,serbuk perasa dan daging...biarkan mendideh.
5.Masukkan beras, daun pandan daun sup dan daun limau purut untuk menaikkan baunya.Kacau sebentar.
6.Bolehlah dipindahkan ke dalam periuk Rice Cooker dan biarkan nasi masak saperti biasa.
7. Hidangkan bersama dengan Air Asam dan daging atau kalau suka hidang dengan sup tulang/daging.Emm... bestnya.
